Chipped Ham BBQ Mac & Chips?


So, if you already have the best Chipped Ham BBQ recipe of all time, you may want to try this absolute garbage pile of over-processed comfort food.

I posted it on a few spots, but it garnered the most attention in a private food group. It also got me Zucked by Meta AI bots for calling it “ωнιтє тяαѕн ηα¢нσѕ.”

French-Dip Sandwiches & Smashed Potatoes


I made these the other night, and they were good! Here’s a quick & dirty method more than a recipe…

A French Dip sandwich with some Au Jus and smashed potatoes.

For the French dip above, I just sautéed a diced sweet onion and canned mushrooms in medium heat in butter, set the goods aside, cranked the heat, seared a roast from Aldi in the same pan, added it, the onions/mushrooms, some shredded carrots, & a can of condensed French Onion Soup to the crock pot on high for 4 hours.

I pulled the roast out to “rest” for a bit before slicing, then put it back into a bowl with some of the liquid for the crock pot

For the buns, I just bought Mancini sausage rolls, melted butter in the microwave, put them in at 375° for 2 minutes, then pulled them out.

Then I piled on the sliced/shredded beef & mushrooms/onions/carrots and some sliced white American cheese, then back in the 375° oven for 5 minutes.

I made an “Au Jus” McCormick packet, and added some of the liquid from the crock pot for dipping. Toasting the buns really helped it stand up to the dip so it didn’t fall apart.

The potatoes were just little Yukon gold potatoes boiled in salty water for 30 min., smashed on to an oil-brushed cooking sheet, then baked at 425° for ½ hour.

I spiced the onions, meat, butter, & potatoes throughout all the stops, I think I added chicken bullion to the potato water, too. I used a lot of garlic & onion powder, black pepper, and Season Salt or Mrs. Dash’s table blend.

Well that’s it. Do you make anything similar? Have some tips & tricks? I have made similar stuff before with Swiss or Havarti or Provolone, used all kinds of different beef or even Steak-Ums, whatever buns/bread look good, used the French’s fried onions, etc. Ya gotta change it up and/or use what you have on hand!

The Meatball Club


So, yesterday I made spaghetti with homemade meatballs. Today, I wanted a meatball sub. I was thinking I still had some good buns from New Year’s day. They were not good. I had already melted the butter. The store-brand white bread was calling to me. A sandwich? No, a club.., Something worthy of shenanigans.

The Meatballs:

I have shared my meatball ingredient secrets a quadruple of times:

I generally don’t measure, and make them different every time. This time I fried them on medium-high in a large pan on the stove & a tiny bit of EVOO.

The Sauce:

OK, gonna level with you. I am not Italian. This is going to make some people mad. I use jarred sauce. This was the cheap Aldi stuff. Usually we get that or the Prego Three Cheese. I add brown sugar & Parmesan/Romano shake cheese. Sometimes, I even add shopped garlic, onion powder, or “Italian Seasoning.” This time it was just brown sugar and cheese. I don’t measure. I toss a little in with abandon. I like the sweetness & it cuts the acid.

The Club:

Get your stuff…

  • ¼ stick butter
  • Garlic powder
  • Onion powder
  • Parsley or (Italian Seasoning)
  • 6 or so leftover meatballs.
  • Shredded cheese (I had Gruyere & Swiss, but I would probably go for Mozzarella or Provolone, but the stuff I had was fantastic.)
  • “Shake Cheese” I had the cheap Giant Eagle brand Parmesan/Romano blend.
  • Three pieces of white bread.

Do it…

  1. Pre-heat the oven to 390° on the air fryer setting.
  2. Melt the butter w/ garlic powder, onion powder, & parsley to taste in a microwave save bowl in 30 second intervals, stirring in between until it’s a liquid.
  3. Put the bread on a baking dish, brush on the melted butter after a good stir. (I just did the top sides.)
  4. Air fry for 2 minutes, & it gets almost crispy on top, the bottom was nice and toasted.
  5. While you’re doing that nuke the meatballs & sauce on a microwave safe plate for 2 min. (or longer if needed.)
  6. Pull the toast out. (I cut the meatballs in half with a spoon then scooped them and the sauce on to two of the slices of bread.)
  7. Top the meatballs with the shredded cheese.
  8. Put the “shake cheese” on the 3rd slice of bread.
  9. Put it back in on air fry for for 4 or 5 minutes.
  10. Pull it out, assemble it like a tower of gluttony, then slice it diagonally with a giant serrated bread knife for dramatic effect.
  11. Take a photo to share & make people hungry.

That’s it. It took a little bit of time & prep, but it was worth it.

Notes:

  • If you cook & have your own meatball or sauce recipe, of course do that.
  • Use whatever kind of cheese you want, shredded, or sliced, or whatever.
  • I would guess you can use the oven on 375°-ish on a regular setting for a bit longer times, or a counter top air fryer.
  • You could also probably do all of it in the air fryer from cooking the meatballs to melting the butter if you have the appropriate vessels.
  • If you slice it in rectangles and not triangles, you are a psychopath.

Oh man.  Does anyone remember my W(aL)D email shenanigans from a decade ago?

One such adventure was writing to Totino’s to ask if they had recommendations for microwaving more than 6 at a time.  They wrote back.  I asked them if I needed to arrange the rolls like wagon wheel spokes or like wagons on the Oregon Trail circling for protection.  I even got some 35¢ coupons that I considered as a research grant.

I won! Information for the people! Research to benefit the masses!

Really though.  This brings up a new series of questions.

When did just arranging in “a single layer become” acceptable?  Who does Totino’s think they are discarding the time-honored tradition of microwaving things in a circle?  Did we learn nothing from our ancestors at Stonehenge?  Did they consult the Softstix team over at SuperPretzel, or just roll forward (pun still intended) with wild abandon?  How do you summon the flavor spirits without the ceremonial circle?

Has the Fibonacci spiral ever been tested as a cooking pattern?  Can Ci3 make me a plate specifically for microwaving pizza rolls and little cheese-filled pretzels with the Fibonacci spiral on it?

BBQ Pork & Slaw Sandwiches


Thought I’d share…

Made these with the wife today, and they were delicious.

Pulled Pork:

  • Pork Roast
  • Bottle of Beer
  • an apple
  • an onion

Dump the roast and beer into the crock pot over top of the sliced apple and onion. Set it on low for 8 hours. Pull out to rest for a bit, then shred with a fork.

ColeSlaw dressing adapted from Primanti Bros. copycat recipe:

  • bag of shredded cabbage & carrots
  • ¼ cup apple cider vinegar
  • ¼ cup distilled white vinegar
  • 5 tablespoons white sugar
  • 1 tablespoon brown sugar
  • 3 tablespoons vegetable or canola oil
  • salt and pepper, & Season All to taste.

Mix dressing together, pour over shredded rabbit food, cover & let chill for a bit in the ‘fridge.

The sandwich:

  • bakery buns (ours were from the big bird)
  • Sliced Meunster (or another white cheese like Brick, Swiss, or Provolone)
  • your favorite BBQ Sauce
  • ⬆that shredded pork
  • ⬆that cole slaw mixture

Build a damn sandwich. Do I really need to explain how to do that?

Trust me, this is delicious.

Concert Stereotypes

This topic was by my friend Laurel the other night at the Dropkick Murphys Shamrock-N-Roll tour.  I know I’ve had this conversation before with others.  I decided to take it & digitally run with it.  Stereotypes are generally a bad idea, but they sure are funny.  A punk rock show, or really any show… is full of them.  I’ll start a list.  You’ll contribute in the comments.

  • That” guy.  Formerly known as “the guy that wears the shirt of the band he’s going to see”, but shortened to “that guy” because that’s a mouthful.  I’ve been that guy.  I bet you’ve been that guy.  Somehow it’s sometimes seen as cool… and sometimes not.  This is probably more acceptable/expected at a Misfits or ICP show than anywhere else.
  • The “Windmill” Guy.  Generally, he’s in a college hoodie, maybe even with his Greek letters on it.  He’s visibly drunk, and probably double-fisting when not in the pit, flailing his arms around in an effort to be cool and badass by totally missing the point of slam-dancing or moshing by trying to hurt people… and take as much punishment as they can get.  You can also spot them by the off-kilter fitted cap, thank Fred Durst for these toolbags.
  • Old Creepy Guy.  I’m rapidly becoming this guy.  I’m cool with that.  The recent Shamrock-N-Roll show saw a really diverse group of concert-goers.  There were grandmas & grandkids all over the place!  Generally though, at smaller shows… there’s a lone dude just hangin’ out that doesn’t seem like he’d be into whatever’s going on at all.
  • Your new best friend.  Cat comes up & starts talking like you’re old buds.  No big deal right?  You’re obviously both fans of the same band, you’re both there.  What’s the harm?  The conversation turns way too intimate or inappropriate quite soon.  You have no escape.  This guy’s probably drunk.  Hopefully, anyway.  He has no concept of personal space, and is telling you all about the band/joke/logo on your T-shirt.
  • The “Stuffed Sausage”.  Generally a petite-in-height but not in girth young lady with self-esteem issues.  Most likely she started as quite an attractive curvy woman, but donned about 3 lbs. of makeup, pushed up and bared most of her boobies, hung some butt cheeks out of a tiny skirt or shorts… and all of her clothing is about 2 sizes too small.  I’m not hatin’, I’m just sayin’.
  • The nearly blind-drunk guy.  There’s always a stumbler ambling through the crowd that’s just there for beer.  At $30-$50 for a concert ticket without TicketBastard fees, and $7-$9 per tiny draft beer… the whole concept is pretty ridiculous.  This guy generally looks like he doesn’t belong anyway.  He squints to see, walks sideways while looking straight ahead, and smells like the floor of a brewery.
  • The militant lesbian.  I’m not going to say much here, for fear of getting beat up.  The partially shaved head and camo pants are a sexy sexy combo that’s always in style.
  • Lookatmytats. This dude or dudette has spent thousands of dollars & hours under the needle, so they wear as little clothing as possible in order to bare their epidermal canvass.  I would too were I all inked up, I think.  Generally this is accompanied by gauges or other “non-traditional” piercings.  Not to be confused with Lookatmytatas, who needs no explanation.
  • Wikipedia Guy.  This one is always directly behind or in front of me at concerts where you have an actual seat… also prevalent at Pens games.  Wikipedia guy isn’t here to be entertained, he’s here to wow the people with him & anyone in earshot with his knowledge of the band’s formation, various lineups, demo material, and complete discography including various pressings and formats.  I’m in danger of being this guy, and it’s so annoying.  I love my music & trivia… but try to only spout when asked, & not broadcast it.

That’s my starter list.

I know I’m missing more than a few that I see regularly, but I’m hoping someone else will think of them too… so I’m not all alone here.  What about the kid with headphones?  The super-fan?  The crying girl?  The PDA couple?

Epic Metal :: It’s not too late to join the quest!


So, the warriors of Dethlehem have dropped a second album, aptly named The Ghorusalem Codex Vol. 2: Of Magick and Tyranny(This would be a follow-up to their 2009 disc, The Ghorusalem Codex Vol 1: Enthroned Upon A Spire.)  If you’re a fan of metal, or a fan of chaos involving things like trolls and dragons and wizards… you need this album.

DETHLEHEM | The Ghorusalem Codex, Vol 2: Of Magick & Tyranny

Listen to this and try to tell me I’m wrong:  Dethlehem “Hypergates of Infinitude”  It’s one of my favorite tracks off of the album.

I’m big a fan of their first album, but this one blows it away in terms of recording, production, and overall album cohesiveness.  The interludes in between songs have become a much better over-all narrative to help guide you along the quest.  (The full story is coming soon to their website.)

Bovice and Hildor are the six-string men-at-arms, and the musicianship here makes me sick.  The guitars are ridiculous, it’s almost too over the top… but with what Dethlehem has going on, it needs to be ridiculous.  I’m talking shredding, sweeps, blazing riffs, and all manner of fretboard insanity.  If I didn’t know these guys, I’d hate them… they make a punk rock power chord chump like me almost too embarrassed to pick up a guitar.  Luckily for the Ernie and the Berts fan(s), I have no shame.

A slight lineup change on this album, Davidicus the Black replaces Galagore… not sure what the official story is, if Gallagore was eaten by a dragon or transformed into a toad by an evil witch or what.  Davidicus is a wizard, and adds a dynamic both in story & in playing style.  You can hear less doubling of guitar parts by the bass, more restraint where called-for musically, and stomping all over the place where appropriate.

Overlord Brom bangs on the drums like nobody’s business, and even my untrained ear can tell there’s all manner of math going on here with time-signature changes.  This is not 4/4 rock n’ roll.  Plus, when he plays live… he starts out with a bucket-like Helmet on his head where it must be impossible to see anything.  (By the way, funniest character voice ever in the narratives.)

Lord Bonecrush has developed what I can only call a battle-hardened confidence in his vocals.  While they were strong on Vol. 1, on Vol. 2 they’ve progressed to a point where any shred of vocal uncertainty is gone.  The vocals are honed sharp like any good weapon should be before going into battle… yet there’s a double-edge… clean for slicing backed up with growling with a ferocity akin to aurally ripping you asunder.  The backing vocals also stand out a little clearer on their own on this one… not sure who’s where… but it’s all done sparingly, tastefully, and appropriately.

While not a technical review by any means, I hope to have conveyed the overall feel of the album, and to have piqued your curiosity.

These guys put on an incredible live show… I suggest you buy the album to learn their songs, and then go see them when they come to plunder and pillage a venue near you.  I’m not sure if you can fully appreciate the epic-ness through just a recording or video.  They’re on tour now if you can catch them!

(In the interest of full disclosure, this may not be a completely objective review… I do know the guys, and they awesomely thanked me in the liner-notes of this disc…  But I’d like to think that those who know me know I wouldn’t push crappy music on anyone.)

This is how we had chipped ham BBQ when I was growing up…

It was put in a pot on the stove & just heated until it was ready.  It has to be Heinz, it has to be Coke (No Pepsi, RC Cola, or Faygo.)

None of the pre-made sauce either.

It needs to go on a nice roll, like Cellone’s.  I never added cheese as a kid, but I like it with a nice Swiss or Brick cheese these days.

I’ve done a large amount of this in a crock pot… several pounds of meat, then eye the ketchup & Coke.
