Pizza Pockets


So, a while back I made some things, and I don’t know if they were calzones or stromboli because no one can seem to fully agree on the definitions of either. Yes, I know definitions exist, but restaurants are all over out here calling them the wrong thing and people will confidently give you their contradicting hyper-regional opinions as gospel. Maybe it’s a turnover? I like alliteration, so Pizza Pocket it is.

The first ones I made were not pretty. They were more half-moon shaped, one was not sealed well. They were delicious, but not awesome. I used pizza dough balls from Aldi and I did not do a great job stretching it.

This time I made some for lunch, and they looked pretty good. I put fillings in to order for each of us, and put our initials on top so they didn’t get mixed up. I got a resounding seal of approval on these, so I’m putting it here to make it again.

Here’s what I used:

  • Giant Eagle pizza dough pop-tube
  • Jarred pizza sauce
  • Shredded Italian blend cheese
  • Shredded Mozzarella cheese
  • Parmesan cheese (the powdery shake kind)
  • 2 eggs
  • ½ stick butter
  • “Toppings:” (Fillings?)
    • canned mushroom stems & pieces
    • canned black olive slices
    • jarred roasted red peppers
    • diced ham
    • mini pepperoni
  • Spices:
    • garlic powder
    • onion powder
    • paprika
    • Italian blend
    • parsley
    • Dash table blend

Here’s how I made them:

  1. Preheat the oven to 400° (Or if you’re weird like me, preheat it to 425° then crank it down to 400° after you put the food in.)
  2. Put down some parchment paper on a large baking sheet because washing dishes sucks.
  3. Put any wet toppings like the mushrooms, olives, & red pepper on a paper towel or two do drain & dry off a bit.
  4. Melt the butter in a microwavable bowl, add in spices to taste.
  5. Crack the eggs into another bowl, whisk (or fork), and add spices again.
  6. Pop open the scary dough tubes with a spoon, roll them out, and cut them in half the short way.
  7. Put down the Italian cheese blend on half of the half. I didn’t measure, but I did use the whole bag. Leave room on the edges so you can seal the dough.
  8. Spoon on a very little bit of the pizza sauce.
  9. Add your preferred toppings, keeping track of who gets what. I took ’em all!
  10. Sprinkle some parmesan cheese.
  11. Top with a little bit of Mozzarella.
  12. Hit the edges with some egg wash.
  13. Fold over the dough to make a nice rectangle, and use a fork to crimp the 3 “open” edges.
  14. Brush the egg wash on top, then brush the melted butter on top of that.
  15. Add extra spices on top if you think it needs it, and go for more parmesan too.
  16. Cut slits in the top shaped like everyone’s initials so you know whose is whose.
  17. Pop that in the oven at 400° for 20 minutes and you get what I got in the picture.

Suggestions/Substitutions/Advice:

  • I measure with my heart. You should too. Trust your judgement. Season until your ancestors tell you to stop.
  • It’s also fun to make mountain pies (if you have a campfire going) or pizza grilled cheese.
  • You could get fancy and do all kinds of stuff like green peppers, pepperoncini, sausage, onion, Ricotta, anchovies, spinach, basil, whatever.
  • Of course use whatever dough or cheese fits your fancy, fits your budget, or is simply what’s available.
  • You can skip the pizza sauce. I also wouldn’t overdo it… you want vents up top to let steam out so it doesn’t stay too wet.

So, do you make something similar? I am way too impatient to make dough, and I seem to even be too impatient to stretch a dough ball properly. These rolled canned tube things were perfect.

Haunted House & Graveyard Mazes


Have you noticed that I like Halloween? I made some more Halloween-themed mazes. I felt like doing a haunted house and a graveyard. My drawing skills have waned, I need more practice. Third book? Maybe. I have sold 10’s of copies of the others so far. If you try these mazes out, be sure to post your solution on your social media of choice, and tag me. I’m @AiXeLsyD13 just about everywhere. So, I have been a casual AC/DC fan for as long as I can remember getting into music. They were always there, always a mainstay, always the butt of “same sounding songs” jokes alongside fellow icons the Ramones. I believe I bought Razor’s Edge & Back in Black about the same time in Jr. High. I really dug “Big Gun” from the Last Action Hero soundtrack, and of course, loved the older stuff with Bon Scott as I got into them.

My kids heard me playing “Big Balls” when they were younger, and of course glommed onto it as the most hilarious song ever. I think I created a rock fan with my son, as he has really dug into the AC/DC catalog.

He wanted AC/DC tickets for his birthday, so we got some… then later traded up when a good friend said he wanted to come to town to catch the show with another buddy, as the speculation spread that it may be their last tour and they weren’t playing out his way.

I prepped by making a playlist of suspected tunes on Amazon Music & Spotify thanks to Setlist.fm. I also have one called 100% Certified Angus on Amazon & Spotify that we rock sometimes too! And my son has been spinning Back in Black on vinyl of all things. (I refuse to get into vinyl or guitar pedals, because I already have a guitar problem.)

Off we went for my son’s first stadium show, first time seeing Heinz Field Acrisure Stadium, & first time seeing AC/DC live! We did catch The Aquabats! at the Roxian last year and that was super badass. That was his 1st concert (if we don’t count the incredible & talented Laurie Berkner for a Christmas concert when the kids were super small) and 1st punk rock show!

If you follow me on the socials, you probably saw a few signs that we were there. It’s super exciting to me to bond over music as it has been such an important thing to me over the years, as a creative outlet, a place of joy, and comfort.

I can say he said it was “the best night of his life,” so I think he had fun! Ha ha. I am glad I got to see Angus & Brian perform. Man, the band are tight, but with a nice loose groove. I knew they were powerhouse rock icons, but to see it? Absolutely amazing. The show production was crazy with the infamous bell, canons, fireworks, huge LED screens, pyrotechnics, confetti, on-the-fly graphics enhancing live video… but at the same time it all seemed very simple. I’m not sure how to convey it. The frills were not the focus. Obviously Angus and his SG’s are the focus. Even Brian knows this, and he looks like he is having the time of his life up there, knowing he has the coolest job in the world.

I think Angus may be slightly slower now that he was in the 80s or 90s, but at 70 years old… he is undeniably crushing it skipping, shimmying, and duck-walking around the stage while playing rambling angry blues licks, goading the crowd into cheering, stripping off parts of the schoolboy uniform, & taking 17 minute extended guitar solos. At one point, he even defiled the fretboard with his necktie as a slide. That is how you put on a show. Some sources online seemed to think Brian’s vocals were low in the mix. I think that was the case where we were at on the floor… but videos from elsewhere have it perfect. His voice is amazing, and again, at 77… he is running around belting out these immortal songs like it’s nothing for 2 damn hours.

The crowd was sedate, lots of people fist-bumping or throwing horns or thumbs up to my dude as we went through the crowd & got to our seats. There were obviously visible drunks, but nothing I saw got too out of hand, even the tailgating outside seemed to be chill.

Scott Mervis has a great review from the PG, and Mike Palm has one from the Trib. I was also able to find a TON of video on YouTube so we can remember the night as long as YouTube is a thing. Ha ha. Check out this bonkers playlist that I am still updating:

It has all kinds of videos from promo stuff, to stage setup, to pyrotechnic stuff, vloggers, and nearly every song individually, from a bunch of different vantage points, and someone grabbed the whole show!

We have had a lot of craziness going on lately, so this was a fun respite and I think we needed it. Hopefully this will be a day long remembered by both of us as a highlight to this year.

Glad that’s over.


I had a rough patch last year. My wife just recently shared this photo she took at the time. It hit me kind of hard.

Me in a hospital bed in September or October 2023.

I was in & out of the hospital for about 3 weeks in a month due to an infection from & complications with a drain from diverticulitis. I had my sigmoid colon and part of my rectum removed, with robot-assisted orthoscopic surgery. Recovery was rough while I was in it, but relatively quick looking back.

The local hospital staff was fantastic taking care of me, the surgeon is the greatest, I was consulted by an infectious diseases doctor on the regular, and my PCP was very helpful throughout.

Medical care and insurance get a bad rap, but because of the medical care, I am still here. It hit me recently too that this is what killed Peter Steele. When this picture was taken, I was coming down from rigors that I got after a simple procedure to remove a drain. They called the rapid response team to medicate me, pack me in ice, & do what they could to help me combat a 105° fever.

This put my wife through a lot of emotional stress. Luckily my job & her job were fantastic with the time off. The kids had questions about if I was ever coming home.

Early on, my boss & a co-worker rallied to bring a cooler full of frozen food & rotisserie chickens to lighten the burden & home. Lots of friends, family, & neighbors reached out with gift cards, food, & support. I can’t thank everyone enough for donations to a GoFundMe or something that must have been out there to help with medical bills. I will pay it forward, and the help is wholeheartedly appreciated. I am humbled by the support & care for our family.

I’m not posting this to lament or for sympathy. It’s mainly just to mentally close it out, as a reminder to be thankful for absolutely everything that I have. It was most likely the impetus for me to finally try out publishing a maze book, putting my stuff on some merchandise, and drawing a maze for my surgeon.

Make every day count. Get small medical stuff checked out before it becomes big stuff. Be there for your people.

New Year’s Day Pork & Sauerkraut II


I came to blog my recipe then through a search, discovered I posted one last year! That was in the roasting pan though, and it was a pork loin rib half. This year, I put a pork shoulder roast in the crock pot… and made some dumplings 2 ways to go with it!

Ingredients:

  • 6 lb. pork shoulder roast 
  • 2 bags of sauerkraut (Beware, “Bavarian style” is a secret code meaning it has caraway seeds & tastes like royal ass. Unless you like caraway seeds or royal ass. I avoid it for diverticulitis reasons anyway.)
  • 1 bottle of beer. I used Straub Amber again this year, but I also like to use Yuengling Traditional Lager. (You could also use Penn Pilsner, Stoney’s, Shiner Bock, or Smithwick’s Red Ale… Don’t be ruining it with Budweiser, Coors or Iron City.)
  • Apple Juice (Maybe ½ cup?)
  • 2 Apples (I like Golden Crisp or Honey Crisp)
  • 1 Spanish Onion (Or a sweet or yellow onion or whatever you like.)
  • ½ teaspoon-ish Minced Garlic
  • Salt (or Season All / Seasoned Salt)
  • Pepper
  • Onion Powder
  • Garlic Powder
  • Paprika
  • Mustard Powder
  • Brown Sugar (Maybe ¼ cup?)
  • Pillsbury Grands Biscuit Dough

Instructions:

  1. Drain & rinse the sauerkraut, unless you’re into clearing the pluming from the top down.
  2. Slice the apples & onions then place them on the bottom of the slow cooker/crock pot, add that beer & apple juice. Add some spices.
  3. Put the roast in, fat side up. Add some spices.
  4. Cover it with the rinsed sauerkraut. Add some spices.
  5. Add that brown sugar sprinkled all over the top, Add some more spices.
  6. I put it on low for 8 hours & it was over-cooked & falling apart, but in a good way.
  7. Cook it to 145° F according to the FDA, 160° according to my thermometer with the numbers beside the pig icon, or 203° if you want it to fall apart.
  8. Cut up 4 of the Pillsbury biscuits into 4 pieces each, pop ’em into the crock pot on the last half hour. I sealed the inside of the lid with foil at that point because I read you should do that online. (Don’t burn yourself!)
  9. Let it rest a bit when you pull it out. That’s just good life advice in general.

I cooked the other 4 biscuits, also cut into 4’s, in my stock pot: 

  1. I tossed some beer, water, apple juice, & ham bullion into my stock pot, then brought it to a boil.
  2. I dropped in the dumpling pieces, and brought it down to a simmer. That’s about a 2 on my stovetop dial.
  3. I boiled for 10 minutes with the lid off, then for 10 minutes with the lid on.

Tips:

  • Damnit, I forgot to do this part: Sear the pork roast on all sides. I used a large fork to control it along with some tongs. I used a hot pan with a tiny bit of extra virgin olive oil & a pat of butter. You just want to sear the outsides, not cook the meat. I did add a bit of seasonings first.
  • I put onion powder on the apple slices and garlic powder on the onion slices… because why not? Does anyone else do stuff this?
  • You could try to roast it.
  • I liked the dumplings from the crock pot more than the ones from the stock pot. they were more fluffy/biscuity and less… wet. They both tasted pretty good & were certainly edible though.

Nostalgia & Stuffing


I hope you have seen my stuffing recipe, and I hope to blog the method for all my sides. I was digging for these, and I thought I’d post it here for posterity. My Grandpap King was always the one who did holiday meals. He passed away when I was very small, but my Grandma always used his stuffing recipe, and that’s what I use today. I’s very simple, and it came from a Westinghouse cook book. I have a terrible photo copy of the book with his notes in the margins where he extrapolated to make a much larger portion. I want to use that small one to make stuffing ball sliders.

My uncle found a copy of the book at an auction or garage sale… It’s the first edition, when looking at the photocopies wasn’t what my family originally had, but it is the same recipe.

I was going to share some mazes for Thanksgiving, and I realized I have a bunch of them. I did some quick dirty coloring of some old ones. I am sharing new ones that will be in my second book, some from the first book, and I have some that are loosely related to fall or Thanksgiving dinner.

Please, use them to have some fun this holiday season! They could be placemats, an activity for those that aren’t cooking while they’re waiting for dinner or for company to arrive, or used as a game to see who finishes first. You could use them to make place cards too if you wanna get creative!

If you complete the mazes by printing them out & solving, or on your phone/tablet/PC with a drawing app, share it on you preferred social media platform & tag me!
