#MeatballSub #Recipe


So, I’ve been hungry for meatball subs.  They’re so simple to make, but we just never seem to do it at home.  I shared the photo on social media, because I’m weird like that and it annoys people, and some people seemed to dig it.  wanted to share how easy it was with a minimal amount of effort.

So, the wife got a pound of ground meat from Aldi the other day, and I picked up the rest of the stuff that we didn’t already have at Giant Eagle on my way home from work.  I probably could have gotten all of this from Aldi.

So this is what I used…

  • 1 lb. of ground beef
  • a handful or two of finely shredded fancy 6 cheese “Italian” stuff – I started with a 2 cup bag.  We always have this or something similar around.
  • Whatever “shake cheese” you put on spaghetti. I have Parmigiano-Reggiano because they think it needs to sound fancy.
  • A handful of crackers.  We had “club” crackers from Aldi
  • Italian Dressing (we seem to really dig Kraft Roasted Red Pepper Italian)
  • A jar of cheap-ass pizza sauce  (I probably should have used some better marinara sauce)
  • Spices (Season All, cracked black pepper, onion powder, garlic powder, salt, Italian seasoning, paprika …whatever floats your boat.)
  • Brown sugar
  • Sub buns (I like the Cellone’s or bakery ones, but I was being cheap this shopping trip and got some weird mass-produced ones.)
  • EVOO
  • Butter

And this is what I did…

Meatball Subs

MEAT.

Turn the oven on first so you don’t have to worry about it later.  Put it on 375° because that’s always what they seem to say to put it on.  I don’t know why.  I don’t even know who they are.

I made some meatballs with the meat, some hand-crushed crackers, a dash of the pizza sauce, a dash of Italian dressing, a dash of whatever spices I grabbed off the rack (probably pepper, season all, onion powder, garlic powder, and paprika), a bit of the Parmesan shake cheese and the mysterious “six cheese Italian” stuff.

I put some spices on the outside because why not, and tossed them into a frying pan with EVOO and a small pat of butter on the bottom.  I pre-heated it to high, then turned it to 6 before I tossed in the balls.  6 is at about 6:00 on my stupid electric stove top.

I melted a bit of butter in the microwave.  I quickly cut open the buns, put them on a baking sheet, spread on some melted butter with a brush and added… garlic powder, onion powder, a dash of shake cheese, and “Italian seasoning” to the buns.  No Italian seasoning for my wife, and no garlic powder for my 2½ year old.  I popped them in the 375° oven on the middle rack for a bit.

I used tongs to turn the meatballs over & popped a lid on the pan.

I dumped the remaining pizza sauce into a soup cup (it was a little jar), and added a sprinkle of brown sugar.  I nuked it for 45 seconds or so.  Why?  I like sweet sauce, and grandma always said “it cuts the acid.”

I turned the meatballs on to an undone side, and got the sub rolls out of the oven.  I knew they were done because… I didn’t even look at them.  I just took them out.  They looked fine.  Plus, we’re not totally finished.  I added some pizza sauce and some of the finely shredded awkwardly named cheese to the buns.

I made sure the meatballs weren’t going to kill us with the food thermometer.  They weren’t.  I put those on the buns and added more sauce, shredded cheese, and shake cheese.

I set some meatballs aside for my 10 month old.  The sandwich was a little much for him, but he will eat just about anything you put in front of him.  Seriously.  even if it’s not edible.

I put the now built subs into the oven and cranked the knob to 400° because I am impatient and my 2½ year old kept asking if lunch was ready.  I turned the light on in the oven and watched the cheese melt.  Not only was that fun, I could also make sure I wasn’t going to burn the bejesus out of things.  I didn’t.  I took it out in time.

Well, some of the cheese that fell on to the baking sheet burned, because I made a mess.  Oh well.

These were pretty good, although next time I will use different/better sauce.  That squeeze stuff isn’t bad.  Maybe I can make a simple marinara.  Also, homemade-ish deli rolls or Cellone’s are worth it… and I would cut a little triangle out of the top like Subway used to, before we were over-saturated with them and they started to serve terrible cream-of-deathfish.

At any rate.  This is easy to do.  You could buy your own meatballs or bake your own bread or use cheese slices to make this as easy or as difficult as you like.  I cut my 2½ year old’s into 3 sections so she had sliders.  I cut my wife’s in 2.  I ate the whole thing in one big sandwich like a hungry hungry pig.  I refuse to apologize.

I wrote back.  Nothing interesting besides pointing out that I never sent those names in an email.

I also got an email from LeAnn confirming our Dormont address, so I passed along the new one.  I wonder if I’ll get a T-shirt?

If it’s gift certificates, does anyone know of a charity that accepts them or of a family in need?

Maybe they’re sending someone to dispatch of me.  Maybe I should ask King’s to weigh in?

So, have you heard of the #TealPumpkinProject?


This year, we’ll have 3 bowls of treats for Halloween.  We’ll have the traditional chocolate gooey goodness, a bowl of peanut/tree-nut free treats, and a bowl entirely made up of non-food party favor-ish goodies.

Why?  Why not?  I was able to pick up a bunch of party favors at the Dollar Tree, and my wife Bethany got some Halloween themed stuff from Target.  The no-nuts candy wasn’t a big deal either, all we had to do was read the label… which we’re used to.  Even the extra bowl was only $1.  It wasn’t a whole lot of effort or money.

Even painting a foam pumpkin teal for use for years to come wasn’t a big deal, or printing the posters from the FARE website.  Oh yeah, I forgot to mention that.  This is a movement.  It started with some of the most kick-ass people on the planet, food allergy moms in Tennessee.

My point, I guess, is that it isn’t a lot of effort but it can be a big huge gigantic deal for a kid.  What’s a big deal?  To feel included on a holiday where you’re hyper aware that you’re different.  To know that this piece of candy doesn’t contain nuts or wasn’t “processed in a facility that may also use peanuts or tree nuts.”  To know that if you’re allergic to dairy or chocolate or just about everything that everyone else can eat or isn’t one of the top 8, but this little trinket or toy (or 2 or 3 if you’re at our house) is all yours.  To know that you don’t have to go home & “trade up” for safe candy on this one.  To know that your parents didn’t have to drop off a safe treat with all the neighbors ahead of time, and that someone else “gets” it.

I always liked getting those Little Hugs drinks (which may be a safe treat), but some people would complain about the weight.  That would have been gone by the time I got back to the road when I was a kid.  Then again, times have changed.  When I was a kid, we had to play the “guess who you are” game.  If I asked a kid his name now, the next ring of the doorbell would probably be the local police.  Also, kids… always let your parents check your candy for razor blades or syringes.

Like I said, we read labels.  Luckily shellfish is generally easy form me to avoid in packaged foods, slightly less so in restaurants.  Our little girl Molly can’t do eggs.  Well, she can do eggs baked into things, but has to avoid straight up eggs, mayonnaise, some mustards, custard, and we just noticed… Mallow Cups?  (I hate them, they are the devil’s candy.  The wife loves them though… even though it tastes like someone replaced the inside of a Reese’s Peanut Butter Cup with sunscreen.)  Will we have to avoid meringue too?  Who knows?  Hopefully she outgrow her allergy, I’ll never get over mine without some kind of cure.

There are many others out there going through the same thing.  We can stick together, and support each other.  We can ask those without any food allergies to support us too.  Spreading awareness is the key to keeping us all safe.  So, take a few minutes to learn about the #TealPumpkinProject.  Use the hashtag on social media (Twitter, Instagram, Facebook, Google+, Pinterest, Tumblr, etc.), get a pumpkin and paint it teal, and/or print out the fliers.  Get some safe treats.

So, I need help with my résumé.


I rarely ever blog about or post on social media about work.  My work life is work, and my personal life is personal.  I’ve never felt the need to discuss, vent about, or provide detail about my job.  I’m going to go ahead and break with that for this post.

Unfortunately, the time has come where I need to update my resume.  About a year and a half ago, the company that I was working for was sold, shut down, & liquidated.  A core group of people decided to try to move on & start a company in the same industry, and I was invited to be a part of it.  I was honored to be asked to participate, and glad to be gainfully employed.  Sadly, things didn’t pan out as planned, and the company is also in the process of shutting down.  Basically, I’m no worse off than I was a year ago.

At that time, I had an updated resume, and went on my first job interview in a long time.  I was offered employment elsewhere.  It may have worked, but the pay wasn’t where it needed to be for me to comfortably continue to pay rent and put food on the table.  I went with the group I knew & salary I needed.  I have no regrets, I’m just illustrating that I don’t have much job interview experience, but it has mostly all been positive.

Basically, I’ve been at the same job for 10 or so years.  In 2002, I started at an a/v integration company as the shipping guy.  That company was purchased in 2005 and I was hired by the new company, which closed in 2011.  Then on to the newest one where I was doing all slight variations of the same thing.  I liked my work, it was a nice mix of desk/paperwork & physical warehouse work sometimes, it was always different & challenging.  I have learned many rules, processes, & things about the equipment over the years.  I was able to adapt to many changes, and survived them all (up until now).

I need help with my resume.  I think I first updated this format in 2005, when it looked like I may have needed to search for other employment.  (Luckily, I was able to work temporarily for the new company, proved my merit, and was hired full time.)  In 2012 this format may be stale.  I’m not big on titles.  I call myself a “shipping guy” but I do much more than that.  I have more skills than a simple shipping guy needs.  I hate phrases like “team player”.  I am, but it sounds goofy.  Who reads that & doesn’t roll their eyes?  I’m generally not boastful (other than in jest), but this is one time when you need to be.  There’s a lot riding on a resume.  It gets your foot in the door.

I’m confident in my writing (thanks to this blog), but thrown into a resume it looks braggadocios, fragmented, & boring.  I love bullet points, but breaking things down into them, I feel like I lose cohesion.

I need this to grab someone’s attention, highlight what I can do & what I can offer, and get me a job.

What do I want to do?  I’m certainly qualified for shipping, warehousing, and inventory jobs… entry level or supervisory.  Sadly, entry level pay may no longer be acceptable.  I could certainly do something else though.  I’m a quick learner.  I’d love to get paid for this writing / blogging / insanity thing (I mean… show/album/food reviews, photos, humor, goofy letters? I can do a bunch of stuff there).  Unfortunately I don’t have a degree.  Can you get one in shipping?  Certainly 10 years experience in shipping I would have learned anything that I could in 2 or 4 years of school?  I do have some training in graphic design & commercial art, I have experience in drafting (by hand even… does anyone remember that?), some talents that have yet to get me paid like drawing mazes and photography, and I recently completed classes in Microsoft Project… so I could even fill a “Jr. Project Manager” type role where I can learn as I go.  I’m certainly adept with computers, know old school (& also useless) html coding, and can pick things up rather quickly with any kind of program.  I can promote things like my band, the blog, and Food Allergies like mad online.  I think I’d be a good PR person, I just lack formal training or experience.  Maybe it’s time for something different.

So, I need help with my resume.  What works, what doesn’t?  1 page?  2 pages?  If  so, how do I fit it all on one or to pages (I think it kicks into an atrocious 3 now)?  What do I need to express?  Do I need a cheesy cover letter?  Do letters of recommendation help?  References right on the resume, or “provided by request”?  3 Personal/3 professional?  3 total?  Cover letter?  No cover letter?  Cover paragraph?

I’m laying it all out here and asking for your help.  Take a look at this resume and tell me what you think?

Jim Dunlop Tortex Fin PicksInspired by a post called Gig Preparation, I thought I’d make some checklists.  I think we’ll need one (and a half) for our stuff, one for setting up the gig, and one for doing stuff at the gig.  The lists would change depending on who’s working the gig or who set it up, but you should be able to help with the flow of things even if you’re not the organizer.  This is also from the point of view of a guitar player, because that’s all I’ve ever been.  I’m guessing it would be the same for a bass player & quite similar for a drummer.

Attn Bands :: Where and how do you promote shows?


So, bands… where & how do you advertise shows these days?  There is of course your own website (if you even bother to have one), social media, and good old-fashioned word-of-mouth. Do you still print physical show fliers?  Where do put them?  Do you pass out handbills?  How many friends, family members, classmates, co-workers, and casual acquaintances do you annoy with news of your shows & how often?

What social media do you use?  FacebookReverb NationTwitterMySpaceGoogle+Google CalendarAnything else?  I know there’s a bunch out there like the ancient Pure Volume (is anyone still over there?).

Then there are sites like Bandcamp, SoundCloud, & even YouTube… they help promote the band, but do they help promote shows?

Which ones do you use & which ones do you find effective?  I know bands helped animated gifs with glittering text kill MySpace.  At what point of posting about your band / shows / music / merchandise does it become over-saturation?

Do you hit the local papers or their websites with classified ads or event listings?  Do you post on local radio websites?

Do you post on the venue’s (and/or promoter’s) website/Facebook/Twitter/etc.?

Do you have an email list?

If you hang flyers, where do you hang them?  If you pass them out, where do you pass them out?

Our weekend of dining in PA Dutch country


Well, if you’ve been keeping up, you read about my plan for our trip, what we did on our trip, and maybe even the email from the Amish Village owner.  This one’s all about the food.  We ate a lot while we were out that way, but we didn’t hit the regular buffet/smörgåsbord places like Miller’s or Dienner’s.

If you’re reading this, you probably already know about my shellfish allergy.  Buffets can be a nightmare for someone like me… not only do I have to worry about cross-contamination in the kitchen (like on shared cooking surfaces, utensils, or fryers), but I have to worry about my fellow slovenly patrons carelessly flinging bits of deathfish on to adjacent foods, or better yet inadvertently dropping some off of their plate while at a different table.  No thank you.  No worries though, with the internet I was able to do a lot of research ahead of time on shellfish-free and allergy friendly restaurants.

The continental breakfast at the Super 8 in Lancaster was lacking, so we decided to check out the Prince Street Cafe first thing on Saturday morning.  We were quite glad that we did!  I had an email exchange going on before our trip with the manager that put me totally at ease.  I noticed there was no shellfish on their menu, but I emailed them to be sure.  It ends up that they do occasionally have a seafood soup and it would be in-house while we were there, but I wasn’t worried about the cross-contamination there after hearing how it was prepared and seeing that they acknowledged food allergies on their menu by offering gluten-free and nut-free options.  I can’t stress enough what a relief & pleasure this type of email exchange was.

The place was packed and we got there shortly after 9:00am.  The line before us went quickly & there were thankfully menus posted prominently in two places near to where you order.  My wife & I both chose the classic breakfast sandwich on ciabatta, I opted for the addition of bacon.  I also had an iced tea, and added some honey which was available on the counter… which made it absolutely perfect.  The sandwiches were great, the eggs were cooked perfectly (by a microwave of all things, I think), the cheese was beautifully melted & the ciabatta was nice & fresh.  I dug the nice slab ‘o bacon too, it didn’t overpower the sandwich.

All-in-all, this seemed like a great place to hang out.  The employees were friendly, there was a really diverse crowd, it was very relaxing.  We’ll definitely be back next time we’re in the area, perhaps for a lunch or even just some coffee.

I hadn’t  seeked-out Jakey’s before our trip.  I did find a business-card sized ad in the giant tourist brochure display wall in our hotel.  I saw the word BBQ, and it was all over.  I mean, I do love BBQ.  I did find a menu online before going in, and again no deathfish, but I did do the usual awkward asking if there is/was every any shellfish prepared there before ordering & after looking over the menu.  After a no from the waitress, a confused look, then a double-check with someone in the back, we were good.  My problem in general with BBQ joints is that I want everything.  Thankfully they usually have sampler or at least combo platters.

Since we were there for lunch though, and doing some touristy running-around, I came to the sad realization that I shouldn’t fill up on BBQ.  I opted for the barbecue turkey sandwich with the mild sauce, and my wife went for the chicken sandwich.  Sadly, you don’t see a lot of turkey BBQ ’round the ‘Burgh… so I was glad to have that as a choice.  I had a side of fries, & Bethany got the macaroni salad.  My sandwich was delicious.  The turkey was nice & juicy, and there wasn’t so much sauce that you couldn’t appreciate the taste of the meat.  I did grab the spicy BBQ sauce that was provided on the table… for the sandwich & for some french fry dipping.  It wasn’t really all that hot for being the “spicy” sauce, but it was really good.  I’d like to try the other meats & the Carolina-style sauce…  Maybe some corn fritters instead of the fries?  We’ll be through again when we’re back that way!

Added bonus, it had a real BBQ joint kind of vibe… it shared space with a T-shirt shop that sold all kinds of stuff, from religious to raunchy.  The tables had that red & white checkered pattern tablecloth, and there were while plastic outdoor type chairs.  The guy behind the counter who I must assume was the owner or at least a manager was very cool to his employees who seemed new, telling them they were doing a good job.  He even sent out extra fries for us, apparently there weren’t enough on my plate when it came out!  Ha ha.  Our waitress did quite well, especially if she was new.  The order was correct, quick, and we had sweet tea refills without even asking.  Add this place to my list of favorite BBQ joints!

Now, this place was just incredible.  Again, I checked out the menu online beforehand, and asked the hostess about shellfish when we arrived.  No deathfish in sight (or hidden in the kitchen), so I was good to go.  It looks like a  quaint little farmhouse with a beautiful garden on the outside, and once inside it doesn’t really lose that farmhouse appeal.  We were seated in a room off to the side with smaller tables, as large tables filled the front room (& I believe around back) and were full of mostly families with a bunch of children.  Our waitress could have played Granny in the Tweetie & Sylvester cartoons if they were to be made into a live action film.

On the way in the door, you opt in for (& pay for) the buffet, and then if you make it through that, you can order desserts à la carte.  We didn’t make it to dessert.  Why?  Well, they managed to stuff me full of literally everything on the menu.  I actually had everything too.  It was quite comforting to not have to worry about any cross-contamination or hidden ingredients… and it helped that everything tasted perfect.  first they brought out applesauce, pepper cabbage (a kind of cole slaw with red bell peppers & a vinegar dressing), chow-chow, and apple butter w/ white & wheat bread.  It was my first time trying chow-chow, and I loved it.  It tasted like bread n’ butter pickles, but was a mixture of cauliflower, carrots, green beans, cucumbers (pickles), kidney beans, and maybe peppers and onions?  Next, she brought out everything else…  Fried chicken, sausage, hamloaf, green beans, corn, buttered noodles, potato stuffing (I’ve heard it called potato filling), & sweet potatoes.  All their meat comes from Stoltzfus Meats, right next door.  The fried chicken was excellent, the breading was perfect & the chicken itself was delicious & succulent.  I could eat potato stuffing all day… I mean carbs + carbs, covered in carb-filled gravy?  Yes please.

I could go on, but you get the point.  If you catch me on a craving & a free day… I just might drive out there to get a meal & come right home.  It would be worth the drive!  I wish I had room for the tapioca pudding.

It’s odd mentioning it with the other places, but we did eat breakfast there.  I’m from the other side of the state where we have Sheetz & Get·Go… so of course I had to try a Wawa.  I’m a huge Sheetz fan, and had it in my head that I already liked Sheetz better.  I may be wrong.  The girl that made our sandwiches was really friendly, and offered to help us with the touch screen if we needed it.  (We must have appeared to be n00bz while we were blipping through checking out the entire menu.

My sandwich not only ridiculously large, but they eggs were really fluffy.  I think the menu said something about them containing cheese?  Whatever they do with them, it works for me.  I got a steak egg & cheese sandwich and it was delicious.  Wawa has the same problem as Sheetz & Get·Go as far as wrapping sandwiches though.  No matter where I get touch-screen gas station food, there’s always more sauce/ketchup/dressing on the outside of the bun than the inside.  You’d think that someone would have come up with a solution for that by now.  Perhaps it’s a tie.  Maybe Sheetz is still my favorite.  It’s pretty close though.  (Luckily, there was no deathfish on the menu, so it’s a safe place for me if not classy.  Ha ha.)

Turkey sandwich, hamburger, & fries.

We stopped here to get some lunch after the first train ride of the day at the Strasburg Railroad.  It was an OK cafeteria-style kind of joint, sadly cash only.  I checked out the menu when we got in there, & did ask if they ever cooked shellfish.  I was told they didn’t & felt safe.  I got a turkey sandwich & Bethany got a burger, and we shared some fries.  My sandwich was pretty good… but Bethany wasn’t a big fan of the burger.  The fries seemed a little old for some reason.  I think we both wished we had just went back to Jakey’s.  Ha ha.

Overall though, I guess we got what we paid for, it was a nice cheap quick & convenient lunch.  I did like the fact that they had up signs warning about the use of peanut oil for those with peanut allergies.  For a family attraction & with food allergies on the rise, this is a responsible thing for a business to do.

First off, best name ever for an ice cream shop.  Secondly, the guys that own & run the place are very cool.  I also can’t believe I didn’t pause to take a photo of the ice cream.  This was another place that I had scouted-out beforehand, and found through either Urbanspoon or Allergy Eats.  I saw that their menu was devoid of deathfish, so I sent the now standard just-to-be-sure email.  They had a soup containing seafood, but it hasn’t been in-house for a while… so I was safe.  These guys were really cool via email, and even dropped me a line about special hours for that Sunday when they noticed I didn’t stop in on Saturday.

I was hoping to make it there for a lunch or light dinner topped off with some ice cream, but as it happened we were heading home well after lunch & way before dinner, so we decided to ruin dinner & just have some ice cream.  It was a good call.  I had a hot fudge sundae in a waffle bowl, and Bethany went for rocky-road in a pretzel cone.  The ice cream was great, and the place was really cool.  It had a nice neighborhood vibe.  They even took a bowl of water out for some customers who were outside eating some ice cream whit their dog.  Next time we’re in the area, I’d like to get in & try one of their panini sandwiches.  They get bonus points for the line “Please alert us of ANY food allergies or concerns you have before ordering.” on their menu.

FOOD

Well, that was all of our meals while on our road trip.  I won’t include the Hardee’s that we hit on the way home…  it’s probably best for them if I don’t comment.

OK, so in my blog about our trip to Pennsylvania Dutch country, I mentioned the Amish Village & their “interesting” tour guide.  The more I thought about it, the more a few things struck me as odd, so I slightly altered my original post to include the questions that were asked by the people taking the tour & answers given by the guide… and then I did something goofy.  I decided to contact the Amish Village to tell them about it.  I sent them this using their webform:

AskCensus | A response on the ACS from the US Census Bureau:


So, out of all the people that I asked about the American Community Survey, none are so relevant as the U.S. Census Bureau itself.  After all, they’re the ones who put it out.  While PA State Rep. John Maher’s response is insightful and amusing, and the Spencarian’s Benjamin Kirby offers a different perspective… only the Census Bureau can comment officially.  It took me slightly longer than their professed 2-day response time to get back to me, but I’m sure they have better things to do than respond to some goofy idiot with pseudonym and an email account.  Also to be fair, they did kind of address my concerns on the FAQ.  I was just a little more long-winded about it.

Thank you for using the US Census Bureau’s Question & Answer Center.  

We appreciate your feedback regarding the U.S. Census Bureau’s American Community Survey. You make many valid points and in a world free of people too busy to respond we could easily get by with one mailing. As it is, our research has shown better response results from multiple mailings and reminder cards and for this program using multiple mailings to get someone to respond to the paper questionnaire is cheaper than obtaining the information by phone or personal visit.

As for the Internet response option we are in the development and testing phase for this application. The Director of the Census Bureau, Dr. Groves, supports this project not only for the ACS but also for the 2020 Census.

As for reducing the time burden on the American public, the director is dedicating resources to researching adminstrative/alternative sources for the information collected on the ACS and Census forms.

Well, that was certainly bland, but at least they are looking to technological advances in the future.  I still see this statement as crazy: “…for this program using multiple mailings to get someone to respond to the paper questionnaire is cheaper than obtaining the information by phone or personal visit.”  I’d love to see that on paper.  (Or better yet, in an email.)
