Culinary Anarchy | You don’t have to parboil the lasagna noodles!

I have seen it out there on the internet for years, and I was afraid. Surely the ready-to-bake lasagna noodles are drastically different from the regular ones, right? I’m not talking fresh pasta that needs no prep… I mean the dried boxed stuff that food snobs will tell you is inferior.

I did it. No one died. Everyone seemed to like it. I’ll put my recipe down here first & the shenanigans after that… because Threads gave me some shenanigans. Trigger warning for Nonnas worldwide: I put brown sugar in jarred sauce. Proceed with caution.

Here’s what I did…

Ingredients:

  • (3) 15 oz. containers ricotta cheese
  • (2) 8. oz/2 cups bags shredded Mozzarella/Provolone cheese
  • (1) 2.41 lbs. package 90%/10% ground beef
  • (1) small zucchini, shredded (maybe 2 cups?)
  • (3) 24 oz. jars marinara sauce
  • (1) 1 lb. box Barilla lasagna noodles
  • (2) eggs
  • ยฝ cup grated Parmesan/Romano cheese
  • shredded parmesan (to taste)
  • fresh curly parsley (to taste)
  • Italian seasoning (to taste)
  • dried parsley (to taste)
  • brown sugar (to taste)
  • jarred minced garlic (to taste)
  • garlic powder (to taste)
  • onion powder (to taste)
  • black pepper (to taste)
  • paprika (to taste)
  • Mrs. Dash table blend (to taste)
  • salt (to taste)

Method:

  1. Preheat oven to 375ยฐ (Next time I may do 350ยฐ for a longer time, but we were in a but of a hurry.)
  2. Brown the beef in a pan on the stove with some of all your spices to taste. (I could/should have included onion here.)
  3. Mix the ricotta, one bag of the shredded cheese, the grated parmesan, a bit of the shredded parmesan, the eggs, fresh parsley, & shredded zucchini in a large bowl, again with all the spices including the garlic.
  4. This filled two 9×13″ glass baking dishes for me. I think I layered them both a bit different. Follow your heart. Put sauce on the bottom, sprinkle in some brown sugar, the dry lasagna noodles, the ricotta mixture, the ground beef, some more shredded cheese, more sauce, more noodles, and just keep going. I did put a very little bit of water in the jars of sauce to swirl around & empty more.. and put that into the dishes too. Sprinkled cheese and made sure there was lots of sauce on top of each.
  5. Cover them tightly with foil & put them in the oven for 50 minutes.
  6. Take out, sprinkle on some more of the shredded parmesan, cook for another 10 minutes.
  7. Pull out, rest for a bit, then serve.

Notes:

  • Like I said, lower & slower next time. Maybe 350ยฐ for an hour then uncover & go for another 15 minutes?
  • Carrots may be good in with the ground beef… and/or mushrooms?
  • Maybe spinach in the cheese mixture or as another layer. Let’s get some fiber up in here.
  • I don’t generally like sausage, but if you do it’d be good here for sure.

Readers, let me tell you… people have feelings about calling that strip of pasta a “lasagna noodle.” There is also the fact that “American” lasagna has ricotta, but traditional does not. I was even told that because I added shredded zucchini it is no longer lasagna. I have made it replacing the pasta with long thinly-sliced zucchini planks and still called it lasagna.

People have lost their damn minds. No one knows that food and language evolve over time and across regions and even households?

I did plug my ingredients list into Gemini, ChatGPT, Perplexity, & Copilot to see what they would churn back out, but honestly I didn’t follow through with any of their advice.

I also make wedding soup incorrectly and put beans in chili. Clutch those pearls! Enjoy a meatball club. Hell, join the meatball club!

Carbs. Cabbage. Canned Beef. | O’Luski


So, I was hungry for corned beef & cabbage, …and I was hungry for haluski. That’s cabbage n’ noodles for the non-Yinzers or those with no Eastern European heritage. I am not Polish by descent or any of the ethnicities that gave us wonderful gifts like pierogies, halupki or the one where cottage cheese is in with the cabbage & noodles. (What is that called again?) In the immortal words of the young lady from the taco shell commercial, “Why not both?”

I am a bit Irish according to my DNA analysis & my surname. If I understand it right… corned beef & cabbage is an Irish-American invention, as back in Ireland it would most certainly be bacon… and the corned beef may have been adopted from the Jewish community. Sometimes you have a hankering for the canned stuff, not a “real” corned brisket.

Typically, I’d probably make this all in the skillet… and these store-bought noodles are nowhere as good as the ladies cooking at a church carnival, but I can make due with what I could get from Aldi. I saw some stuff online suggesting to finish up haluski in the oven. So, why not?

Canned meat, Cabbage, Carbs. I present to you the hottest new trend in Irish-American/Polish Fusion cuisine; O’Luski.

I had ChatGPT help me put together a recipe after I described my method, I still had to tweak it thoiugh. It filled 2 glass 9″x13″ baking dishes. I only put the corned beef on top of one.

Oโ€™Luski: Pittsburgh Polish/Irish Cabbage n’ Noodle Corned Beef Casserole

Ingredients:

  • 1 small head green cabbage, cored and sliced
  • 2 medium onions, sliced
  • 16 oz. bag of wide egg noodles
  • 2 sticks unsalted butter
  • 2 cans corned beef
  • Salt, black pepper, paprika, onion powder, & garlic powder to taste.
  • 1 tsp. ham soup base
  • 1 cube chicken bouillon

Instructions:

  1. Preheat oven to 300ยฐF.
  2. Cook the egg noodles until tender in water with the ham soup base & chicken bouillon, drain, and toss with a couple tablespoons of butter. Set aside.
  3. While the noodles are cooking… Slice the canned corned beef, fry in a skillet on medium-high heat to crisp up the patties. Take them out & set aside. (I did crumble up a bit of the corned beef & leave it in the pan.
  4. Melt 1 stick butter in the same skillet over medium-low to medium heat. Add the onions and cook until starting to turn translucent to brown.
  5. Add the cabbage to the skillet with the other stick of butter, season with salt and pepper, and cook until tender and lightly caramelized.
  6. Combine the cooked noodles with the cabbage and onions, mixing well. Transfer the mixture to two buttered 9×13″ baking dishes.
  7. Scatter the crisped corned beef over the top. Bake uncovered at 300ยฐF for 25โ€“30 minutes. I put corned beef on top of one dish, and left the other just mostly cabbage & noodles.
  8. Let rest a few minutes before serving. Optionally, top with a final pat of butter for extra richness.

Notes:

  • I season with everything just about every step of the way… light on salt because of the corned beef & the bouillon. I probably used Mrs. Dash Table Blend too.
  • AI kept suggesting acid like vinegar or lemon juice. This is not the dish for that. ๐Ÿคฃ No caraway seeds either. This is comfort food.

Roasted Broccoli Cheddar Soup w/ Ham n’ Cheese Beer Bread Sandwiches ๐Ÿง€๐Ÿฅฆ๐Ÿฅฃ๐Ÿบ๐Ÿฅ“๐Ÿž


It’s cheeseception. I wanted to try that cheesy beer bread in some grilled ham & cheese sandwiches… and I needed some soup for the side, right? Why not up the cheese level with my old broccoli cheese soup or my potato soup? I thought the fiber from the broccoli may be beneficial. ๐Ÿ˜†

I altered the recipe a bit.

I probably should have stuck with a traditional tomato soup to combat the absolute decadent richness, but this soup was pretty damn good. I want to try to make a roasted butternut squash soup eventually too… but not sure that would pair well with this sandwich?

I did spice-up my original broccoli cheese soup recipe. This could be a full meal, or a side to a nice turkey or roast beef sandwich. Recipe down below. That’s what I did this time. I’ll probably make it slightly different next time. Everyone does that, right?

As far as the sandwich, I just cooked some lunchmeat ham for a few seconds on the panini grill, sliced up the cheesy bear bread, buttered the outsides with softened butter, and stacked it with some individually wrapped cheese slices… cooked on high on the countertop grill to sear & melt it all at once. I should have gotten a side view, but I was hungry.

๐Ÿฅฆ๐Ÿง€๐Ÿฅฃ Roasted Broccoli Cheddar Soup | The Recipe

This is like my last recipe, but slightly altered.

Ingredients:

  • 2 sticks of butter
  • Extra Virgin Olive Oil (or whatever kind you like)
  • 1 cup of flour
  • ยฝ cup of shredded carrots
  • ยผ cup of diced celery
  • ยฝ Spanish onion
  • 1 Tbsp. minced garlic
  • ยฝ tsp. ground mustard
  • ยฝ tsp. paprika
  • ยฝ tsp. onion powder
  • ยฝ tsp. garlic powder
  • ยฝ tsp. salt-free table blend seasoning
  • ยผ tsp. white pepper
  • Salt, black pepper, & dried parsley to taste
  • 1 cup buttermilk
  • 32 oz. box of chicken stock
  • 32 oz. box of vegetable broth
  • 12 oz. bottle or can of beer (I used Yuengling Traditional Lager.)
  • 2 tsp. Ham Broth Base (I used Orrinton Farms)
  • 3 bundles of fresh broccoliย (chopped up into spoon-sized pieces)
  • ยผ cup of bacon pieces
  • 10 oz. block of extra sharp cheddar cheeseย (grated)
  • 10 oz. block of white cheddar cheeseย (grated)
  • ยฝ cup of parmesan cheese
  • 16 oz. block of Velveetaย (cut onto small chunks)
  • 2 cup bag of shredded โ€œmac & cheese blendโ€ cheese

Method:

  1. Pre-heat oven to 425ยฐ, & do all your chopping/shredding/measuring.
  2. Toss about โ…” of the broccoli, & a bit of carrots & bacon pieces in a bowl with salt, pepper, & oil to coat. Roast on a sheet pan for about 20 minutes.
  3. While that is going, melt butter on medium heat in the bottom of your stock pot, add celery, carrots, onions, garlic, & sautรฉ for a bit.
  4. Mix all the spices with the flour, add to pot to make aย rouxย and let it get a nice color brown.
  5. Add the beer slowly to the roux, then the boxes of stock, then the buttermilk.
  6. Add remaining โ…“ of broccoli & bacon pieces, bring to a boil, simmer for about 15 to 20 minutes.
  7. The roasted broccoli should be done, hold it until you have 5 min. left of simmering.
  8. Turn heat to low, stir in all that cheese. (I mixed it all into a bowl 1st)

Notes:

  • This was a different soup when roasting vs the last time. I could honestly go for either again.
  • I used whatever seasonings at every step as they struck me in addition to the measured amounts.
  • I did pop in a squirt of yellow mustard, too. Mustard is botanically related to broccoli, & acts as an emulsifier.
  • Fresh real bacon would be incredible here, maybe more of it… or even bits of cubed ham.
  • You could skip the beer & do 1ยฝ cups of water with the ham bullion or Better Than Bouillon. I like to use Straub Amber to cook too.
  • I wonder if a red bell pepper would be good in this too?
  • This makes a large pot, so hope you like leftovers.
  • My apologies to vegans, the lactose-intolerant, and the dairy-allergic.

German-Style Hot Potato Salad


I was in a cooking mood last weekend, and I tried out some hot German style potato salad. As usual, I googled recipes, solicited advice on Threads, and even bounced stuff off of LLM’s. I came up with the recipe below, and it paired nice with some Reubens. The bread on the Reubens was less than stellar. I need to get some better rye, & make sure it’s still seedless. (Thanks, diverticulitis!) Maybe marbled or Pumpernickel is the way to go? I’m not much of a baker, unless it’s as easy as the Cheesy Beer Bread.

Hot German-Style Potato Salad

OK. So here’s what I did:

Ingredients

  • 2 lbs. red potatoes
  • 10 strips thick-cut bacon, chopped
  • 1/2 of a Spanish onion, finely diced
  • 1/2 cup chicken broth
  • 1/4 cup white vinegar
  • 1 tablespoon sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground mustard
  • Salt, Pepper, Onion Powder, & Garlic Powder to taste
  • Dried parsley to taste
  • Fresh chopped parsley

Instructions

  1. Put the whole potatoes in a large pot and cover with about 1 to 2 inches of cold, salted water (or chicken broth for extra flavor). Bring to a boil and cook until the potatoes are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes well and set them aside. (Next time I will add the other half of the onion here. I did add a bit of ham bullion to the water.)
  2. While the potatoes are cooking, place the chopped bacon in a large skillet or pan over medium-low heat. Cook until the bacon is crispy, stirring occasionally to ensure even cooking. Using a slotted spoon, remove the bacon pieces and place them on a paper towel-lined plate to drain, but leave the rendered bacon grease in the skillet. (I may have snuck in a tiny bit of butter here.) This seemingly takes forever but is worth it. I seasoned the bacon with onion powder, garlic powder, & black pepper.
  3. Add the diced onion to the skillet with the bacon grease. Cook over medium heat, stirring often, until the onion is soft & translucent.
  4. To the skillet with the onions and bacon grease, add the chicken broth, white vinegar, sugar, Dijon mustard, and ground mustard. Whisk the mixture to combine. Bring the dressing to a simmer and let it cook for about 2 minutes to allow the flavors to meld. Season with salt and pepper to your liking. I put the dried parsley in here, too.
  5. Dice, the still-warm potatoes into large 1-inch-ish chunks, then place in a large bowl. Pour the hot dressing over the potatoes and gently toss to coat. Stir in about half of the cooked bacon pieces.
  6. Let the salad sit for at least 15 minutes to allow the potatoes to fully absorb the flavors. Just before serving, sprinkle the remaining crispy bacon and fresh chopped parsley or chives over the top.

Beer Cheese Bread & Beer Cheese Dip! ๐Ÿป๐Ÿง€๐Ÿž


Apparently beer & cheese have been on my mind lately. I saw a post by @swampmuse on threads of some cheesy beer bread and it looked awesome. She was cool enough to share her recipe. That got me thinking about beer cheese dip because of the shared ingredients. I was in a cooking mood last night. I’ll definitely be making the bread again, and the cheese dip would be great for pretzels… so maybe new years or a cold October night?

They were good together. I wonder if beer cheese bread in beer cheese dip is meta, or merely going hard?

I hardly drink any more, and the big bird was out of Yuengling bottle six packs & only had Straub Amber can 15 packs… so, I ended up with 2 big-ass 24 oz. cans of Yuengling Traditional Lager.

I had this on my mind, looked at a bunch or recipes online, and just winged it.

Ingredients:

  • 1 16 oz. block of Velveeta
  • 1 8 oz. block of cream cheese
  • 1 cup beer
  • 1 cup shredded sharp cheddar
  • 1 cup shredded Gouda
  • ground mustard to taste
  • white pepper to taste
  • yellow mustard to taste

Instructions:

  1. Cube up the Velveeta & cream cheese, put it in a crock pot on high.
  2. Toss on the mustard powder & white pepper to taste, add a dollop of yellow mustard.
  3. Stir it every 10 min. or so until it’s melty.
  4. Add in the beer, stir.
  5. Add in the shredded cheese, stir.
  6. Stir.
  7. Be incredibly patient.
  8. Stir.

Notes: It takes longer than you think & looks weird until it hits that “just right” point. This is probably a different time estimate for every appliance. You could obviously do this in a sauce pan or double boiler if that’s what you’ve got. The mustard is an emulsifier and helps with smoothness. I picked white pepper over garlic or hot sauce as other recipes noted. I also skipped Worcestershire sauce as some recommended as it can contain anchovies, and weirdly anchovies can trigger shellfish allergies. Dropping some jalapeรฑo or poblano from the garden into this also would have been pretty killer.

If I ever make pretzel bites again, this is a must.

One time, I got to pop up on stage and sing “I Turned Into a Martian” while Jerry Only played bass, sang, & Doyle Wolfgang Von Frankenstein played guitar, & Goat (a.k.a. We take for granted that everything is recorded these days, but back then it wasn’t. Misfits bootleg videos were a hot trade commodity at one point online. I’m pretty sure this show was recorded, because Crowbar had closed-circuit TV’s that were displaying the show as it happened. It may have been deleted or not recorded, it may have hit a personal private collection. Someone else may have been in-house recording. Not sure if Doug Evil was there?

An-Die & I road-tripped to State College several times with several different groups to see the Misfits in several iterations in addition to seeing them a bunch in Pittsburgh… so my memories may be conflated. I know Russ from TVCasualty.com was there!

I’m pretty sure Murphy’s Law & Impotent Sea Snakes also played. I only remember this because Goat was pulling double duty, and our friend Laurel was apparently hit in the face with an… adult toy… during the ISS set.

I remember An-Die telling me that I had stage presence, and obviously Jerry Only has a huge stage presence, and it did not jive. Ha ha. I’m sure I looked weird, but holy shit it was fun. (I always feel weird signing without a guitar in my hands anyway.)

Another fun fact, this was after I had broken my nose, and i was wearing a bandage covering most of my face. I know I have photos of that somewhere but I cannot find any.

Oh yeah, I broke my nose stage diving at American Music Cafรฉ. Who’s set was it? I think it was Third Place, Tybalt, or maybe even Ten Pounds Lighter/Secrets Lie Within. I just remember someone fake kicking me that ended up not being a fake kick, a weird celery crunching noise, and my nose being mostly under one eye. I ought to try to chronicle old show stories some day.

I was the Fiend Club “Chapter Head” for a minute in the late 90’s early 00’s, so I got to see the band when they were in & around town. I think Jerry & Rocky sort-of kind-of knew who I was, but I always tried to not be a pain in the ass & ask for stuff or to get on the Turbo Die or anything. It was a fun time in life.

Stolen Mazes! (Someone took my art.) ๐Ÿคฌ

from "Norderstedt : Books on Demand" is using your artwork.

I did write back, but have yet to receive a reply. I would like to thank you Jakob, for reaching out! Not sure how you found me, but then again maybe I am sure as the one stolen maze is kind of highly specific in subject matter, but we’ll get to that.

I did do some light Googling though, like a modern-day super lazy Sherlock Holmes (or at least Dick Tracy). The ever-so-helpful auto AI summary was actually kind of enlightening…

An AI summary via Google about some weenis that stole a bunch of mazes to create print-on-demand books.

Yeah. That one past stuck out.

I take that to mean “Bruh finds shit on Pinterest or Google image search and steals it to put into his books.”

I did find a book creatively titled Labyrinthe: Leichte Schwere und ganz ganz Schwere, which according to Google Translate says Labyrinths: Light, heavy, and very, very heavy. It luckily had a link that looked like a preview link, and I was able to see inside part of the book.

Mr. Heppke has a website, and apparently several books. I know that print-on-demand can be looked down upon by “real” publishers, and these are considered “low content” books, but theft is theft.

I have been drawing mazes since I was a kid, maybe 4th grade or so? I have put a bunch up on the internet (especially at this blog among other older sites) for free over the years. I don’t need this dude or anybody stealing my stuff, taking credit for it, or making money off of it. Oh yeah, taking credit? Dude has stones. That sure looks like a ยฉ 2022 to me by his name in a book full of mazes that he didn’t draw.

I know I have pinned them in the past, so they may be floating around there too. There are probably about 100 people on the planet who have heard, saw, heard about, or remember my old punk band, AiXeLsyD. Why take that maze? Our logo is right there beside a terrible drawing of my 1986 Buick SkyHawk. Weird. Also, it name drops Sheetz & Wendy’s as places to not stop (as well as a nudie bar). They may have a harder copyright infringement case than me? ๐Ÿคฃ I’m sure the maze is much older than 2012. The quality of the scan & the coloring is BAD.

I have thought about collecting all my old stuff for a book… but the thought of checking to see if they’re passable & providing solutions is overwhelming, and now that I put out You Can See Yourself Out, I feel like I have a level of quality that I need to maintain. Drawing the mazes & posting them has always kind of been a creative outlet & stress relief for me. I think I’d need to re-scan the pile of stuff that I have, and the stuff that I just posted to social media with phone pictures if I were to do it right… and include solitions.

I’m not doing art to get rich, or even make a living… but if I can fund keeping this blog AiXeLsyD13.com, and buy some art supplies, that would be awesome. I have made tens of dollars off of my books and merch. That’s not a complaint by any means, but some dude across the globe shouldn’t be making money off of my art. (As an aside, check this shit out! Art theft is rampant, and following @kilkennycat_art on Threads has opened my eyes to it.)

Which brings me to the other mazes here. I’m sure just by looking at the style, there’s a few mazes by renowned cartoonist, maze artist, & educational television host Joe Wos. I think there’s at least one by Sean C. Jackson. The cover appears to be by Brian Hilbert (Check out his Pittsburgh maze!).

I have tried to lift up other maze artists here. It’s a weird little niche. We gotta look out for each other, in my opinion. I did post about this issue on r/mazes, too.

I’m unsure of my next step. Is reaching out directly to Norderstedt Books on Demand and/or Kurt Heppke directly via email with some sort of cease and desist the way to go? Is that at all official? Is Google Translate even gonna get it right?

I don’t have any written verbiage here about my mazes being copyrighted, but I do have dated posts, and I think copyright is implied with any created works… no? I have no idea how any of it works really within the US, let alone internationally & specifically in Germany.

At any rate, I implore you to by mazes (or any art) from the artist through their official channels… or enjoy the many free mazes that are put out there by all of us.

So, Cease-and-Desist email or letter? DMCA Takedown? Both? Lawyer up? I’m assuming there is not much to financially recover with print-on-demand sales. I just don’t want anyone making money off of my art other than myself.
